Gaúcho chefs move through the room with skewers straight off the open flame and carve onto your plate. You never order a cut. You decide when the next one arrives, and when the evening is over.

  1. Turn the card green

    Green side up and the carving continues. Red side up and the table rests. It is the only thing you have to say all night.

  2. Start at the market table

    Seasonal salads, charcuterie and the feijoada bar, included and unlimited — a first course you build yourself.

  3. Pace the fifteen cuts

    Ask for the picanha first. Everything else comes back around. Brazilian sides arrive at the table without asking.
